Skordalia

6 cloves of garlic
8 slices of bread without the crust
1 cup of olive oil
1/2 cup of pignoli nuts
3 tablespoons of white vinegar
salt and pepper
lemon juice


Peel the garlic cloves and mince in a food processor. Break up the bread and soak in a bowl of water. Squeeze the water from the bread.

Add the bread to the food processor and mix well. Slowly add the olive oil. Add the pignoli nuts and mix until smooth. Mix in the vinegar and season with salt and pepper and a little lemon juice.
